Flu-Busting Matcha Porridge with Ginger

At time of writing, I’m sat in my favourite plant based café in Bath – Beyond The Kale – sipping on a chai latté and planning my next adventure! I promised myself this year I would do more weekend trips and exploring of the beautiful places I have right on my doorstop in England and Europe. If anyone has any wonderful city break recommendations, I’d love to hear them on Twitter… 

One of my favourite things to do is to think up delicious porridge flavour combinations. I love going through my cupboards and picking and choosing different ingredients to go together. To be honest, It's probably the only speckle of creativity I have - I'm a hard-core accountant with a passion for spreadsheets… I know.

Flu Busting Matcha Porridge with Ginger -

At this time of year ginger is a popular ingredient, and rightly so. Most of us get the winter sniffles at some point in the colder season and ginger is the illness kicking nutritional powerhouse we all should include in our diets. Ginger contains the bioactive compound gingerol which is what brings it so many medicinal benefits – the two most commonly known benefits being high in anti-inflammatory and anti-oxidant properties. I’m always looking at different ways to include it in my diet, such as in this flu busting matcha ginger porridge. This recipe could definitely be an overnight oats recipe too, simply place all the ingredients in a bowl, mix up and place in the fridge overnight.

Matcha is always a winning flavour with almond milk as they just simply go so well together. We all love a piping hot matcha latté, so you can imagine how deliciously nourishing this bowl of goodness is. Packed with a cheeky ginger kick makes this one a true flu-busting winner.  Picture this being eaten in a cosy armchair in your favourite fluffy socks and jumper, with a piping hot cup of herbal tea by your side, your favourite radio station playing... Need I say more?

Flu-Busting Matcha Porridge with Ginger
Makes 1

For the porridge: 
  • 3/4 cup oats
  • 1 tablespoon chia seeds
  • 1 level teaspoon matcha
  • 1/2 teaspoon freshly grated ginger (substitute: 1/2 teaspoon of ground ginger powder)
  • 1/2 cup unsweetened almond milk
  • 3/4 cup water 

Topping suggestions:
  • Cubed apple 
  • Sprinkling of mixed seeds - pumpkin, sunflower, linseed, sesame
  • Dollop of nut butter of your choice

Add the dry ingredients - oats, chia seeds, matcha powder, ginger - to a shallow pan and give it all a mix up.

Add the water and almond milk, stir up and put on a low heat. While you're waiting for the pan to heat up, cube your apple. 

Once the oats start to gently bubble, constantly stir until the oats are soft and the consistency is creamy and a beautiful green colour. Feel free to add a dash more almond milk.

Pour into your bowl immediately (leaving the oats in the pan even off the heat will continue cooking them and dry them out) and add your toppings.

My 2017 Intentions

While not a fan of making New Year’s Resolutions, I am a big fan of creating goals; I find them exciting and I love the challenge of constantly pushing myself to be better and achieve more. There’s something so motivating about writing down all the things you want in life, and knowing that you can have every single one of them.

To kick off me getting back into my blog after a year off to focus on my studies, I thought I’d share my personal intentions for 2017. These are mainly focused on health, wellness, looking after our planet and personal growth – four of the most important things in my life.

If you haven’t thought about your own 2017 intentions, or you have but haven’t written them down, I urge you to get a pen and paper and write them down right nowMake it official. It’s the first step in truly moving forward.

Get as many chemicals out of my home as possible
Educate more people on the benefits of a zero-waste lifestyle
Reduce my screen time, replace with getting to know new people
Go on as many adventures as possible!

Simplistic Vanilla Smoothie Bowl

A beautifully simple, flavourful and easy smoothie bowl, taking the grand total of 5 minutes to make from start to finish. Vanilla is one of my favourite flavours and I love to use it in as many things as possible. It brightens up any smoothie, bringing to the table a sweet yet subtle flavour that goes well with so many brilliant ingredients.  

The addition of oats to this smoothie bowl allows the smoothie bowl to take on a different consistency; there is a satisfying thickness that needs a spoon while giving you slow releasing energy throughout the morning. Perfect for your pre workout fuel. Add in more almond milk to make this a more runny, drinkable smoothie and get creative with your toppings!

Chocolate Orange Oats

I’m sure I can relate to most people here
when saying that the flavour of chocolate orange was simply the best thing ever as a child. The absolute glee on mine and my sister Emily’s face when we unwrapped Terry’s Chocolate Orange boxes as children from our sacks on Christmas morning will always be a fond memory of mine. There is a flitter of the same excitement when I smell the same heart-warming scent today in my 23 years of age. The two flavours combined together are absolutely heavenly. The childhood nostalgia kicked in this week and I decided to recreate the memory in a slightly different way.
